Rainy Day Cupcakes

So, (whoa. how many posts do I start with "so"?) yesterday's weather was lovely. My day in general was also pretty nice. That said, I decided to treat myself with a Locopop. For those who aren't local to Chapel Hill, Raleigh or Durham, Locopops are these delicious Mexican paleta-inspired popsicles. My absolute favorite is the Mexican Chocolate flavor (but there are about a million other tasty ones). Needless to say, that deliciousness inspired me to do some baking/sweets-making this weekend. Annie said there's some Mexican chocolate home-made ice cream in our future!

Despite that, I went on a little dessert recipe search and found this:
Rainy day cupcakes! I couldn’t bake real rain into a cupcake, but some blue food coloring and sprinkles almost do the trick! To make your own, just add a couple drops of blue food coloring or food gel to 1/3 of your favorite vanilla cake batter. Scoop a tablespoon of it into the bottom of your paper lined cupcake tins to make the “puddle.” Next, add a few tablespoons of blue jimmies sprinkles to the remaining (undyed) batter to make the raindrops. Add a couple tablespoons of that to the cupcake tins. Then bake! Finish ‘em off with a “cloud” of white vanilla buttercream—suddenly your rainy, cloudy day becomes a delicious treat! (You know what goes really well with rainy day cupcakes? DOUBLE RAINBOW CUPCAKES! All the way!)
